Kree or Heather... how could I modify this??? Chocolate cake!

This is not safe yet...so don't make this until Kree modifys it!!
Wackie Cake 3 cups flour 6 tbl cocoa 2tsp soda 2 tbl vinegar 2 cups water 2 cups sugar 1 tsp salt 2 tsp vanilla 3/4 cup cooking oil Mix dry ingredients together. Add vanilla, vinegar and oil and mix. Add water and mix well (for about 2 minutes with electric mixer.) Bake at 350 in greased 9x13 pan for 40 minutes. Frosting 1 cube butter 1 tsp vanilla 1/2 cup cocoa About 1/2 cup milk About 1 box powder sugar Melt butter and add cocoa. Cook over med. heat until it comes to a bubble. Remove from heat and add vanilla. Alternate powder sugar and milk until it is good spreading consistency. This is my mom's recipe, what do you think? Can we modify it??? Thanks for you help!!!

Hi Steph! That cake would be simple to modify. I would just use 1/4 cup canola oil and replace the other 1/2 cup with unsweetened applesauce.
As for the frosting, that's a little tougher. All that butter is NOT IBS-friendly. How about trying it with the frosting Heather has posted on the index. It looks like it should work great!

Thanks Kree! Too bad about the frosting! Is is sooo darn good! Bev the chocolate lover would just die over this cake!!! So if anyone really wants to impress people with a wonderful...Not IBS friendly cake then make this...if anyone want to make it IBS safe....do as Kree says!!
Kree...that frosting Heather posted looks really good!! Kind of similar!
So replacing the butter with soy garden would still be to much fat huh?? Oh RATS!!!( as Bev would say )

Actually Steph, what does one "cube" of butter mean? I was a little confused about that. If it's just one Tbsp that would be fine... but if it's one stick or some huge amount like that, no way!

I would like to make this for my birthday tomorrow--the IBS safe version, of course.
2 questions:
-for the Vinegar--is it 2 TBSP or 2 tsp? Tablespoons sounds like a lot.
-for the Water--cold? boiling? doesn't matter?

Yep its 2 Tablespoons of vinegar! (remember the name is Wackie cake! ) And the water is just warm.....not cold or hot!
This is a really yummy cake! I hope you enjoy it!
Just remember to use the modified version...and the frosting recipe Kree posted!

I used to make this all the time. I love it. I actually think my recipe called for more vinagar, believe it or not. I should really make this again. BTW, it is really good with the seven minute frosting I posted last year.
