Does anyone have any ideas on a substitution for clam juice? Quite a few of our recipes call for it... and we being good vegetarians don't use it! Any ideas to help us out?

(I say we, and of course it's only poor Eric that cooks anything. I have no patience for that! )

I would just use vegetable broth... I would suggest chicken broth....but then I remembered that vegetarians don't eat that either! I've seen chicken broth as a sub in a few clam/pasta dishes.

Yep, I'd use the aseptic pkg veggie juice as well, but cook it down (to about half the original) to make it more concentrated and the flavors much stronger.

It's hard to find a sub for clam juice................nothing, just nothing has that same flavor!
