Heather's Zucchini bread..need some help please

Hi all, I want to make the zucchini bread but have a few questions:
1. About how many zucchini should I buy for the 2 loaves? 2. Can I use egg beaters or liquid whites as I hate to waste all the yolks if I use real eggs...do the egg whites have to have the consistency of meringue as I don't think these packaged substitutes can do that 3. Finally, aren't the skin and seeds of zucchini insoluble fiber and therefore not soothing to IBS tummies?

I buy about to medium sized zucchini's. I'm not sure about the egg beaters, I think its ok! Zucchini is souluble fiber and when its grated the seeds don't cause any problems!
I made this bread last week, its really good. I've made it a few times now!!! Really easy!

Yep, I use Egg Beaters all the time and they always work great. And Steph answered your other questions!
