Hello to all. Hope you enjoy!
-Soft Pretzel-
1/8 cp. hot water 1 package dry active yeast 1 1/3 cp. warm water 1/3. cp. brown sugar 5 cp. flour coarse salt (margarita salt) baking soda
In large mixing bowl, mix warm water & yeast until dissolved. Stir in warm water and brown sugar. Slowly add 5 cups flour to mixture. Knead dough until stretchy and smooth. Use extra flour to keep dough from sticking to board. Should not be sticky. Spray two large cookie sheets with non-stick spray. Pre-heat oven to 475 degrees. Fill a 2-3 qt. pan half full of water. Add 1 Tablespoon baking soda for every cup of water. Bring to a boil.
Now pinch off a golf ball size piece and roll into rope as thick as thumb. Bend into U shape. Cross ends, twist cross ends making full turn, then fold ends back toward middle of U. Press ends into dough firmly. You should now have the familiar pretzel shape. Don't worry, shape doesn't affect the taste so you can make any shape. (circles or sticks)
Now lower pretzel gently into boiling water for 30 seconds then place on greased cookie sheet. Sprinkle with coarse salt. When all dough has been boiled, bake for 8 minutes or until golden.
Serve with mustard or I Can't Believe It's Not Butter spray.

Rase - this looks great! I've been looking all over for these pretzels--they;re so reminiscent of Philly for me. Thanx again.

Sharon, you're welcome. I used to have these smothered in cheese, but now enjoy them safely without. Speaking of Philly reminds me of an oldtime favorite, cheesesteak sandwich. Wouldn't dare touch one now.

Try melting a slice of soy cheese over the pretzel. Might work!

Rase - Oooohhhhh MMMmmmmyyyyyy GGGoooooodddddddd...I love Philly cheesesteak sandwiches. When I first married Dan about 22 years ago, I took him back to NJ (he's a native Californian) to meet my Dad. We stopped at one of my most favorite places for cheesesteaks. He just loved them. In fact he said they were the highlight of our trip (that is, aside from meeting my Dad...he had already met my Mom when she came out here).
