You'll need a 4 qt pot
1 pound of Tiger shrimp fresh (you'll need to peel and clean it or buy it already done) 4 zucchini med size cut 1 16oz bag of mini carrots 1 small yellow onion cut qtr 3 pieces of stalk of celery cut 3 med new england potatoes or 5 small size cut 1 tbsp cilantro chopped 1 8 oz can tomato sauce salt to taste
In the Pot fill with water a little over half full. bring to slow boil. Add all cut veggies, you can add potatoes a little later due to them softening up, add cilantro salt and 1/2 of the tomato sauce. return to boil and cook veggies. Once Veggies are cooked add clean well rinsed shrimp, boil only 5-7 mins. Shrimp will be a pink color. Don't overcook shrimp or they'll be chewy. Turn off and enjoy with white rice or nice added addition of your favorite soup cracker. You could even have some dinner rolls. Hope you like this we are having it for dinner tonight!!

White pototoes, is what I call them but the grocer has named new england? This dish of soup is a family recipe of my husband mexican roots they call it "Caldo De Camaron". You can try substituting chayote for the potato and also for the regular zucchinni try a mexican version squash it's green in color I say it looks like a pickle, it taste wonderful with it also. Hope you like it!!
