Hawaiian Chicken - slow cooker

3 lbs chicken breasts 1 16oz can pineapple slices drained 1 15 oz can mandarin oranges drained 1/4 cup cornstarch 1/4 cup brown sugar 2tbsp lemon juice 1/4 tsp salt 1/4 tsp ginger ground
Combine all ingredients in the crock. Stir well Cover and cook for 4-5 hrs on low or 2-3 hrs on high. Makes 6 to 8 servings. Serve with steamed rice and dinner roll. Enjoy!!!!

I've eaten pineapple in chicken recipes before and it's never bothered me. If your worried, I'd say to just make you sure you have some rice or bread before you have any fruit!

This new GI Dr has me worried about the fructose intolerance so I'm a little worried about eating fruit until after the test. I wish I didn't always overreact!

Do you have to have this because I don't know if we have any or not. I'm not sure what purpose it serves in cooking so I thought I'd ask.

In this recipe it's used as a thickener. If you don't have any, you could use flour.

Yes you'd probably use a little more flour than cornstarch. But in a crock pot recipe you can be forgiven for a multitude of sins.......lol.

I've got all of the ingredients in my slow cooker but wondered. There is a lot of cornstarch and no liquid to thicken. Is there a liquid ingredient missing or is the recipe correct? I see others made it so I've started it but ???

I made this again tonight for dinner! My family loves it, has anyone else tried it? LOVE it! What else do you serve it with besides rice? It's kind of a full meal deal. Just wondering if anyone serves it with something else!

Hi Steph, Try some rice noodles or thin spaghetti noodles will work too. Get creative with your IBS side dishes just make sure it's a good soluble base for the madarin/pineapple in the recipe.

I'm bumping this question because I have the same one! I'm interested in making this for dinner tonight, but the lack of liquid confuses me. Is this right, or are you supposed to add in any of the fruit juices? Thanks!

I'm not allowed to have sugar, but I might make this recipe for company some time! How long should this recipe be cooked in the slow cooker if I set the cooker to low? You only gave the cooking time for a high setting.

Hi Kree, I've made this twice. You do put in the cornstarch but no juice from the fruit. I think it produces natural juices while it cooks! It's really yummy! Go for it...give it a try. You'll love it!

This was big hit!! Very good and tender!! I made baked potatoes and let them cool a bit, peeledthem, then cut them up into squares and poured the chicken and the sauce over the potatoes!! YUMMMM!!!
