Minestrone Meatball Soup

I made this recipe yesterday, it is one of my son's favorite soups.
1 c. chopped onions 1 c. chopped celery 2 cloves garlic 3 (14 1/2 oz) cans chicken broth 1 28 oz. can tomatoes, undrained and chopped 1 6 0z. can tomato paste 1 c. carrots, chopped 1 c. chopped potatoes 1/4 c. parsley 1 tsp. dried basil 1 tsp. dried thyme 1/2 c. uncooked macaroni 1 can kidney beans
spray dutch oven with pam. heat over med heat. add onions, celery, & garlic. cook til tender. stir in remaining ingredients, except macaroni and meatballs. bring to a boil, reduce heat. cover and simmer for 30 minutes. stir in macaroni and meatballs. simmer uncovered 10 to 15 min. more.
Meatballs
1# ground turkey breast 1/4 c oatmeal 1/4 c grated parmesan cheese (soy) 1/4 tsp dried italian seasoning 1/4 tsp garlic powder 2 egg whites
Mix well, and form balls. fry in a large non stick skillet, til nicely browned.
I top it with parmesan cheese and eat it with french bread. It is a hardy soup, perfect for this time of year.

You asked if you could eat it? Gerry, I don't know why not. You mean because you have diabetes? It has a little macaroni in it, but that's okay for you, isn't it?

can you cook this in a slow cooker.I haven,t started veggie yet.an Heather told me to try some an if I cook it in a slow cooker it would really cook the veggie good. an yes I can eat pasta plain.Gerry

Hi Gerry,
You can cook this in the crock pot AFTER the vegetables have come to a boil in the fry pan first. The crock pot just simmers it, so it would work okay from that point on.
However, be aware that pasta does not come out well in a crock pot; it ends up a mushy mass. Don't you have a Dutch oven? If you simmer it in a Dutch oven, the veggies get cooked as well as in a crock pot, if not better.

I did go to bed but woke up with cramps at 2:00 a.m. I hate that, don't you?
Gerry, don't you have a large heavy pot with a tight-fitting lid? What do you make soup in? If not, don't go out and buy one just for this one recipe! Use the crock pot, but first cook it on the stove as I mentioned, then simmer in the crock pot -- but I would leave out the pasta until it's almost done, and return it all to the stove to "finish" it -- and that's when I'd add the macaroni.
