The BEST Baked Potato Soup Ever!

Tired of my recipes yet?? Lol. Okay, I didn't name this recipe myself, but it's definitely aptly named. It's so thick and delicious! Perfect Winter comfort food, especially served with crusty bread.
The BEST Baked Potato Soup Ever! (Makes 4-6 servings)
2 medium potatoes (about 2 cups chopped) 2 Tablespoons soy margarine (oil might work too, but I'm not sure) 1/2-1 cup diced white onion 2 Tablespoons flour 4 cups chicken broth 2 cups water 1/4 cup cornstarch 1 cup instant mashed potatoes 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon basil 1/8 teaspoon thyme 1 cup soy or rice milk shredded cheddar soy cheese, to garnish
1. Wash potatoes thoroughly and microwave until tender. (I poked them with a fork first and it took 10 1/2 minutes on HIGH in my microwave) 2. If you would like you can always bake in a 400 degree oven for one hour or until done. 3. As the potatoes are cooling, melt your margarine in a large saucepan and saute your onions until light brown. 4. Add in your flour to make a roux. 5. Add in your chicken broth, water, cornstarch, instant mashed potatoes and spices and bring to a boil. 6. Reduce your heat and simmer for about 5 minutes. 7. Take your cooled potatoes and peel off the skin and chop up into desired pieces. 8. Add in your chopped up potatoes and the soy or rice milk to your soup and bring it back to a boil. 9. Reduce heat and simmer for about 15 minutes or until it is thick. 10. Garnish with soy cheddar cheese. 11. ENJOY!

Never, never, ever tired of your recipes.............Are you kidding? Where'd you get that idea? You just have the knack for knowing what sounds good to all of us and coming thru with it. Hey, load up that freezer now……….when you start subbing you're going to need those comfort foods (and maybe one of Bev's Jacks) just to get over some of those days. With as cold as it's been in your neighborhood I'd think you'd be eating hot soup for breakfast, lunch AND dinner!!!!! I would!
BTW, did you see the test question I posed (for you and anyone else that wants to compute it) on the percentage of fat in the Williamsburg gingerbread cookie recipe? (You just sort a prompted it, you know. See, it's all your doing… .). I think you'll be surprised. Not going to say you're theory is right or wrong, just that you'll be surprised……..How's that for being evasive?
From one who NEVER met a potato in any form I didn't like, thank you…

Kree, That reminds me of a question I have for you too. I buy Schwan's mashed potatoes which are basically plain mashed potatoes frozen in tater tot shaped balls so I can't measure out 1 cup. Do you know what 1 cup instant uncooked equals when it is cooked? Thanks!

I use Food Club, which is the generic brand at our grocery store. Maybe instant mashed potatoes are like semisweet chocolate chips, and the generic brands are dairy-free even though the brand names aren't?? It's worth checking out.

This recipe is GREAT! I'm going to make a double batch next time! I added a handful of finely shredded carrots, and before serving, I whipped the whole thing through the blender and it came out smooth and creamy. Delicous!!!

I made this for lunch today and it was a big hit. Thanks so much for another great recipe. Plus, leftovers!
Changes: Omitted the cheese. Used 1 tablespoon canola oil instead of 2 tablespoon safe margarine. The soup tasted fine but my roux didn't brown - the flour just sort of clumped, then smoothed out when I added the liquid.
Next time I'm going to crisp-fry a slice of turkey bacon and crumble it on top. (I'm not super sensitive to fat, but if you are - "don't try this at home".)

Could you use "Potatoe Pearls" ... dehydrated potatoes instead of instant mashed potatoes. Are they the same things?

I would think so. I use Betty Crocker's Potato Buds and they're just: Potatoes Mono and Diglycerides (to improve texture) Sodium Bisulfate and BHT (preservatives)
Ick. I shouldn't read labels once I've bought something.
I've also always thought that I could probably use actual mashed potatoes. I'd just need to work out how much liquid to take out of the recipe based on how much liquid I use in making the mashed potatoes. But Potato Buds/Pearls are much easier. Unless I have leftover mashed. Hmm.
(I didn't realize until I did a Google search that there are actual pearls called "potato pearls": web page. Pretty cool. )
