Silken Tofu Whipped Topping

I found this today while surfing, it looks good and we've all been asking for a non-dairy whipped topping.
10 1/2 -oz package extra-firm or Firm tofu, reg. or low fat 2 To 4 Tbls. sweetener of your Choice 2 T Lemon juice 1/4 t Vanilla extract 1/8 t Salt 1/8 t Almond extract Soymilk as needed
Place all ingredients in a blender or food processor and process until very smooth. Add more soymilk a teaspoon at a time if the mixture is too thick; blend well. Place in a covered container; refrigerate until chilled. Makes 1 3/4 cups

http://www.cdkitchen.com/recipes/recs/1429/Silken-Tofu-Whipped-Topping73490.shtml Use the "SILKEN LITE FIRM" Mori-nu by Morinaga brand in the aseptic pkg. on the shelf, and didn't need soymilk to lighten, but had to add more than 4T of sweetener to my taste using sugar (powdered might dissolve better), less if alt. sweetener, and ONLY 1t of lemon just or too sour cream like and watery. Drain and press the tofu well with paper towel, to get it closer to 10.5 oz, since the pkg. is 12.3 oz, like tofu for mayo, since they both separate as they sit in the fridge. Appx. 2T = 33 Cal, 3Fat and 2Protein. Still like real whipped cream better...sorry.
