Here's another goodie!
Tofu Mayo This is a low fat substitute for mayonnaise.
1 (10.5 ounce) package firm silken tofu 1 1/2 teaspoons distilled white vinegar 1 teaspoon salt 1/2 teaspoon dry mustard 1 teaspoon granulated sugar
In a blender combine tofu, vinegar, salt, mustard and sugar. Blend until smooth. Keep refrigerated. Makes 10 servings.

This is the same recipe I saw on another website and tastes really good;My adult son couldn't tell it from reg. mayo, that is until I told him it was made with tofu! I used a stick hand blender in a narrow deep container that came with it. Thought I should post this reply because it needed another recommendation. I give it the whole 5 star rating P.S. I couldn't find the lite silken firm Mori Nu 10.5 oz tofu which would bring down the fat to 10g. I could swear their lite version use to be even lighter at 5g.

Tofu Mayo
This is a very low-fat substitute for mayonnaise.
1 package Mori Nu lite silken firm tofu (Turn opened box upside down with fingers covering/pushing up to drain)
2 teaspoons distilled white vinegar
1 teaspoon salt
1 teaspoon mustard
1 teaspoon granulated sugar or 1/16 teaspoon only of "pure" stevia (no fillers)
In a blender or with a stick blender: Combine tofu, vinegar, salt, mustard and sweetener. Blend until smooth. Keep refrigerated.
Makes 10 servings.
