question about a recipe EFI

I do have a question about page 172, thai fried rice with cilantro and shrimp. Last weekend we made the recipe, almost the same as the book. We only used 6 cloves of garlic instead of 8 and we used other soy sauce as we didn't had mushroom soy sauce. It was very salty. Is that normal or are there different kinda fish and soy sauces which are less salty? We did like it but we would like it more with less salt. We didn't use any salt in the recipe. Thanks in advance.

Oh, and 1 more, how long can you keep cooked rice in the fridge?

especially if you used a traditional Japanese soy sauce (like Kikkoman) instead of the mushroom.
If you can't find the mushroom soy sauce, try diluting the soy sauce you have with water. Fish sauce will always be salty but I don't think there's as much variation there.
You can keep cooked rice for quite a few days - and the older it is, the better the fried rice will be!

Thanks for your reply again. I will take a look for the mushroom soy sauce. It's nice to surch (and often find!) for things to make good healthy meals.

Cambodian, etc. they should have mushroom soy sauce. If you can find Healthy Boy or Fat Boy brands they're the tastiest.

Once in the few months we go to an Asian shop and I saw on the internet they do sell Healty boy mushroom soy sauce. So next time we will buy a bottle of that. Thanks

Be very careful of old rice. I found out recently from a food scientist who works for the health department it is one of the most terribly bad things to eat leftover as it is extremely dangerous if not refrigerated straight away and heated up to extremely high temps. It's true that cold it makes better fried rice but cool it down in the fridge right away and heat up the following day at a really high temp.
