Oriental Baked Chicken
1 can tomato soup (I used about 11 oz. Imagine Foods organic tomato soup)
3 Tablespoons vinegar
2 Tablespoons soy sauce
2 Tablespoons brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
2 lbs boneless, skinless chicken breasts
1. Combine all except chicken.
2. In a 3 quart casserole, arrange chicken breasts.
3. Pour soup mixture over chicken.
4. Bake at 375 for 50 minutes or until juices run clear.
5. Stir sauce. (I had to stir it occassionally while cooking so it didn't get too thick)
6. Serve with white rice, if desired. The sauce tastes great on the rice!

So - tomato soup is okay? I had been avoiding it since cooked tomatoes were too acidic - so I lumped that in there. I don't know why. Silly me. Does that mean other products like paste and sauce are okay too?
This sounds like a really good recipe!

If you add just a tiny bit of sugar to tomatoes, it cuts the acidity.

I think some people tolerate the acidity of tomatoes better than others, so it's probably something you'll have to experiment with. Personally, I'm fine with tomato sauce, soup, etc. as long as I have it with soluble fiber (e.g. sauce on pasta, a tiny bowl of soup with a sandwich, and the rice in the case of this recipe). And Bev is right, sugar cuts down on the acidity, too!

So would the brown sugar in the recipe do this as well, or does it have to be white?

Yes, brown sugar will cut the acidity as well as white.

Wow Kree, And yet another great recipe from your collection....this is a must try for me............and I'm a lazy cook (as if anyone doesn't know that by now). Wondering if you could do the same with fish fillets, say cod or halibut, laying lemon slices over them before pouring the sauce on, then baking at a shorter time. What do you think?
When are you going to produce your own cookbook????
