Baby Food Brownies
Ingredients
1/4 Cup melted butter or margarine
2/3 Cup baking cocoa
1/2 Cup whole wheat flour
1/4 tsp baking powder
1/4 tsp salt
1/2 Cup sugar
1/4 Cup brown sugar
2/3 cup baby food puree (pumpkin, sweet potato, squash, or yam)
2 egg whites
1 1/2 tsp vanilla
1/4 tsp instant coffee powder
Directions
Melt butter and cool. Then simply mix all ingredients together thoroughly. Spread mixture into a greased eight inch square pan. Bake in a 350 degree oven for about 20 minutes or until brownies are slightly firm

make sure you use a non-dairy butter, something like Earth Balance or Spectrum, that's also non-hydrogenated.
Watch out for the whole wheat flour - that may be a trigger for you, and it's also likely to make a nasty brownie. I'd try the recipe with regular all-purpose white flour first, and see how that goes. Then try with whole wheat and see if you still tolerate it.
Also, you could probably sub applesauce or canned pumpkin for the baby food if that's easier.
Finally, if you cook with Tummy Fiber you could add 2 teaspoons into the dry ingredients. That will give you extra soluble fiber and it also makes brownies and cakes fudgier and denser and moister.
Best, H
