Serves 4 Prep time: 10 minutes Cook time: 10 minutes
2 cups rice, uncooked salt and black pepper, to taste1 4 chicken breasts 2 tsps olive oil (i used cannola) 1/2 cups sliced fresh apricots (about 4-6 large) 1/3 cup apricot preserves 1 Tbsp hoisin sauce 1 Tbsp soy sauce
Cook rice as directed on box.
While that cooks, salt and pepper the chicken. Heat oil in a large skillet over med-high heat. Add chicken and cook 2 minutes per side, 'til golden.
Add remaining ingredients and bring to a boil. Reduce heat to low and simmer 5 minutes, until chicken is cooked through and sauce is thick.
Serve over rice.
