Well, I was going to be good and bake a little brownie recipe that only serves 2 people. But then I decided that I wanted leftovers (hee hee). And I couldn't find a recipe to fit my 9-inch-square pan, and I didn't feel like doing math out the wazoo, so I just borrowed my friend's 9-by-13-inch pan. So oh boy, there are certainly leftovers . But oh so good...
Antidepressant Brownies
3/4 cup (175 mL) unsweetened cocoa powder 1/2 teaspoon (2 mL) baking soda 1/3 cup (75 mL) EACH oil and applesauce 1/2 cup (125 mL) boiling water 2 cups (500 mL) sugar 4 egg whites 1 1/3 cups (325 mL) flour 1 teaspoon (5 mL) vanilla
Preheat the oven to 350 degrees F (180 degrees C).
Grease a 9-by-13-inch (22-by-33-cm) baking pan.
In a large bowl, stir together the cocoa and baking soda. Blend in the oil, and mix until smooth. Pour in the boiling water, sitrring until the mixture thickens. Now stir in the applesauce, the sugar, and the egg whites. Mix until smooth.
Add the flour and the vanilla. Blend completely--there should be no lumps. Now pour into the greased baking pan. Spread the batter evenly to avoid crispy edges.
Bake for 35 to 40 minutes (mine were done in 25, but I used a glass dish), until just set in the middle.
Let cool and cut into squares.
Makes about 20 brownies (I cut them into 24). --adapted from _Clueless in the Kitchen_

FINALLY made these this weekend!! WOW.... it was fast, they are YUMMY YUMMY YUMMY.....
After hubby & I each tasted one.... he said, "what is for dinner and do I get another brownie with it?!!??"

Oh, hubby wanted brownies again last night..... and when he gets a craving.... there is no end to hearing about it until he gets it!! LOL
So, while watching the season premiere of 24...(we love that show)... I whipped up these brownies again. We each had one about 10 mins after they came out of the oven.... that is about as long as I could keep him away from the pan....hehehe

Linz you were asking about freezing them.... I'll have to try that tonight when I get home....otherwise they will all be gone so fast! I'll let ya know!

Tess, these brownies are TO DIE FOR!!! I can't believe it; I thought brownies had to have bags of chocolate chips in them and lots and lots of butter for them to be tasty. You proved me wrong! These brownies are incredible. Who would think they have applesauce in them?!? Even Don is diving into them (and he claims to not care for sweets!). THANK YOU!!!! Bev.

Has anyone made these in a 9x9? I want to make these, but I want them a little thicker. Do you think I could make it in a 9x9? Do I need to adjust the recipe or the baking time?

I used a 9x12 foil disposable pan and cooked mine for about 30-35 mins and they were about an inch thick.
I would just use the 9x9 and start checking after about 35 mins....

Yes, I'm on a roll here... just trying to find things that are ok for both IBS & MY Diet!!
Here are the calories for this YUMMY recipe using Canola Oil and Sweetened Applesauce.
IF you cut into 24 servings = 131 calories per serving.
If you cut into 20 servings = 157 calories per serving.
IF you cut into 24 servings = 3.30 grams of fat per serving.
If you cut into 20 servings = 3.99 grams of fat per serving.
IF you cut into 24 servings = .93 grams of fiber per serving.
If you cut into 20 servings = 1.11 grams of fiber per serving.
The WHOLE recipe is 3139 calories, 79.70 grams of fat & 22.30 grams of fiber so if you cut into another size then just divide this number by however many it makes.
Hope this helps others out too!!

Anyone know if it matters whether I use dutch processed cocoa or the "normal" (in the US) one? Do I have to change the Baking powder amount or add baking soda or something?

My mom is really bummed because she can't have chocolate anymore (no caffeine allowed). I'd love to give her a yummy chocolate brownie recipe that uses cocoa powder, but she also can't have white sugar or white flour! Would rice or buckwheat flour be acceptable substitutes? She can have brown sugar, but that isn't exactly a good substitute for white sugar. Anyone have any ideas out there? I thought perhaps someone who's diabetic might have a suggestion.

I am new to the site, but have found many wonderful recipes. It's funny that now that I can't have chocolate and sweets I crave them. I used to never want sweets. I decided to try these brownies today. My fiance's father was over. He knows I don't cook or bake. He tried them and complimented my fiance on how good they were. I butted in and told him I had baked them. Funny...I can cook and bake, now that I HAVE TO! Thanks for the wonderful recipe!

Not sure why you can't have applesauce, but this little amount spread across 20 servings wouldn't give you that much applesauce per serving. You would probably be okay.
I think this would be too much oil if you used all of it. I think it would be about 8 grams per brownie if you used 20 servings.
Can you have peach sauce or mango sauce? I have a recipe that uses baby food pureed peas to replace the fat. The brownies turn out really good to (even though it sounds gross!). Maybe you could use that.

I agree with Jordy that if you use all oil it would to much fat even with the servings that you get. Also I use baby food in alot of recipes as well when it calls for oil. I can use applesauce but sometimes I am out so that is when the baby food comes in handy since it store for a long time in the jars. Also the amount of applesauce per brownie would be very little. The peas would be a good idea i think because first it does not have much of a taste so it wouldn't change the taste of the brownie where as other foods might change the taste.

Try using pumpkin instead. I have used Libby brand pure pumpkin for baking... you wont taste the pumpkin. Hope that helps!!

Good idea I use the pumpkin to. I don't know why I can't have applesauce but I have used it in a recipe before and had D the rest of the day if it wasn't that then it was the cocoa powder because those were the only 2 ingredients that were new to me in that certain recipe so I have just stayed away from it since.

I wondered if you can get stevia in USA as a white sugar sub? Its a sweet leaf thats used to make into a powder like sugar.

I made these tonight for my dad's birthday and they were a hit. My boyfriend was definitely nervous about trying them and even asked me if I would be insulted if he told me they were terrible. Well I proved him wrong because he had 2! (my dad had about 5 haha). I cannot believe how moist they came out...I was not expecting that at all. Just wondering, if I reduced the oil and add more applesauce/pumpkin, will they be less moist?
