Deviled Eggs w/Egg Substitute Filling
5 hard-cooked eggs, chilled
1 cup egg substitute
3 tablespoons fat-free whipped salad dressing or mayo
¼ teaspoon horseradish
½ teaspoon mustard
½ teaspoon vinegar
½ teaspoon salt, optional
Black pepper and paprika, optional
*Cut the hard-cooked eggs in half and discard the yolks.
*Spray a skillet with nonfat cooking spray.
*Over medium heat scramble the egg substitute in the skillet until done.
*Place the scrambled eggs, salad dressing or mayo, horseradish, mustard, vinegar, and salt in the food processor and mix until smooth.
*Fill the egg whites with the mixture and sprinkle with the paprika.
Note: If you prefer a sweeter taste, use less mustard and add 1 to 2 tablespoons sweet relish.
Yield: 10 servings (2-1/2 pieces per serving)

They are yummy!! I want to make more for tonight but hubby says he does not want me out driving.... it is snowed last night and we live in Seattle...which means the whole world comes to a stop....LOL So, I can't go to the store to get more eggs (I don't normally keep them in the house...hubby eats eggbeaters now too)

I am so happy, I never thought about just using an egg sub. Do you think it would be ok with just egg whites? I love deviled eggs!!!!!!

I'm not sure... I would think you would need at least one yolk (or egg sub) equivilant for the taste.... but I guess if you used mustard etc.... it might taste just fine. If you try it...let me know.

Shell, I'm north of you -- and it's STILL SNOWING! It hasn't let up for well over 24 hours -- no rain at ALL -- just more SNOW, SNOW, and MORE SNOW!
I ain't complainin' -- I love it. I'm on my way out to go for a walk in it. Great fun.

We're RIGHT ON the Canadian border; we can almost walk across. It's really covered in snow up here -- snow was blowing in our faces as we walked around the golf course -- but couldn't find the path and almost ended up in the duck pond! (Good thing it was frozen over!) I threw snow balls at hubby. It was a LOT of fun!
Being an ex-Californian and new to this area, this is a REAL treat for us!
