This recipe was posted back 2004 and I adapted it to make it very lowfat. It turned out GREAT !!
Strawberry Bread
1 1/2 cups flour 1/2 tsp baking soda 1/2 tsp salt 1 cup sugar 1 tsp vanilla extract 1 1/4 cup fresh strawberries 1/3 cup egg whites (instead of 2 eggs) 1/2 cup applesauce (instead of 1/2 oil) 1 Mix dry ingredients 2 Beat eggs with oil and vanilla extract 3 Add berries and liquids 4 Bake 350 for 1 hour in loaf pan 5 Cool 10 minutes before removing from pan Servings: 16 Yield: 16 Nutrition Facts Serving size: 1 serving Percent daily values based on a 2000 calorie diet. This sounds really good, thanks for posting. I used to make a delicious strawberry bread but it had quite a bit of oil and whole eggs.
I am going to give this one a try because I love strawberry bread.

Could you use this recipe and just had different fruit like blueberrys?

I don't see why you couldn't. I used bananas instead of strawberries the third time I made it and it turned out fine :-)

If I used frozen whole strawberries, would that work in this recipe? Do I need to thaw them first?
