Shell's Tuna & Apple Salad
6oz Tuna White Albacore, drained (I use Low Sodium, but that is NOT necessary for IBS) 1 Tablespoon Light Mayo (use what is safe for YOU and IBS) 1/2 Granny Smith Apple, peeled and chopped 1 Teaspoon Lemon Juice 1/4 Teaspoon Ground Cinnamon 1/2 Cup Mandarin Oranges, canned & drained
Mix all together and refrigerate.
(I make this the night before and take it to work for lunch, I also eat a 1/2 cup of applesauce 1st or with it for more soluble fiber, you could also add a little pasta shells and/or chopped celery (I don't care for celery), but then you might need to increase the mayo a little too.)
Approx 350 calories for the whole recipe.

I love the apple in it.... gives that CRUNCH that I NEED at lunch.... I got one of those "Quick Chop" things...so the chunks are now even smaller then in the picture....
When sitting over night the mayo, lemon juice, & mandarin orange juices, & cinnamon all mix together into a little sauce...I just mix it all up before eating...it is SO YUMMY!!
Is it lunch time yet?!?!?

I finally got sick of veggie burgers and pasta and started going through the message board printing receipes and this is one of the first I tried and am in heaven. This is so yummy, I had for dinner last night and made it for lunch today. Thank you so much for posting. I added a small amount of rice that I made in OJ instead of water and it was perfect, filled me up and no more boring lunches.

I just realized I made this twice and didn't notice to put mayo in it and it was fine! Good for me less calories.

Well I am hooked on this little receipe and have made it a few different ways, my last one, in place of the mandarin oranges I chopped up some fresh mango and added cilantro and some crushed hot peppers. This is such a satisfying lunch with the different textures. I don't miss the carbs at all but do have some rice crackers on the side.

Perfect! Glad this got bumped to the top! I was just missing my old Tuna & Apple Salad (with yogurt and walnuts), this sounds better actually! Think I'm going to try this next week. =)
