almond milk pudding

Holy crap, I just made the coolest thing! I'm so proud of myself, I needed to share.
I combined the following in a small saucepan:
1 1/2 cups almond breeze (I used vanilla but choc would work well too!) 2 Tbsp cornstarch 1 1/2 Tbsp sucanat (add to taste) 1/2 tsp vanilla extract 1/2 tsp rum extract
Stir over medium heat until mixture thickens and bubbles. Place in serving dishes and refrigerate until cold. Makes 2-3 servings, depending how much pudding you want!
I'm going to play with different flavors - I think next time I'll add some carob powder, since I can't tolerate chocolate and I've been craving it!

I can't do chocolate, but I'm sure it's delicious
I just made another batch (it makes a really small batch - ate the first one already!) I used vanilla almond milk and maple syrup. Hopefully it's tasty!
I've really been missing yogurt, so this is sort of a nice substitute - sort of the same consistency.

Because I'll be up all night peeing and having bladder spasms! I have Interstitial Cystitis which is like having little ulcers all over your bladder - anything spicy or acidic will irritate it and cause frequency, urgency, and pain.
Now aren't you glad you asked

I had bladder spasma like that after my daughter was born so I know what your going through!! It lasted for like 7 months or more it was horrible. I can't do very much choclate or sugar it upsets my ibs. What do you eat for fruit. I am c as well I can't do bananas or applesauce. I can do peaches, strawberrys , blueberries and can pears once in a while. just wondering... emmasmom ibs-c gas

I used the sweetened, and only a little bit of added sugar. If you use the unsweetened, I would add a little more sugar to compensate.
