First of all I want to thank you for your wonderful diet, books and website that has CHANGED my life in the 2 mths that I've been on it. I have probably had IBS my whole life but have never been helped by any doctor. I truly commend you!! You are an angel!!! The pumpkin pie will be a hit this year at my familys holiday. I made this yesterday and it is awesome! I'm not much of a pumpkin pie fan, and this is the first one I've tried that I actually enjoy. And it was a big hit with the rest of the family, too. I just cryptically said it was a "new recipe" and didn't go into detail about how healthy it was.
I made a couple of modifications. I used vanilla rice milk (and thus skipped the vanilla in the recipe and reduced the sugar to a rounded 1/2 C.). And instead of graham crackers for the crust, I used ginger snaps (this part was epecially a hit with the hubby).

I also made this for Thanksgiving, and it was fabulous! However, I've learned that a lot of the IBS recipes for cakes, breads, and pies are not high altitude compatible. I added about 1/4 cup of flour to this pumpkin pie recipe and baked it a little longer, and it definitely helped it "set up" better in the middle. Delicious!

Why pumpkin rather than pumpkin pie filling? I have organic pumpkin pie filling with the following ingredients:
Pumpkin puree Evaporated cane juice Cinnamon Nutmeg Ginger Cloves Allspice 0 grams of fat
Is there anything wrong with these ingredients? Not for this particular recipe but just in general would this be considered an IBS safe food?
