Found this recipe today and thought it sounded interesting. It needs some adaptation, though.
Mango Bread
Ingredients: 2 c. flour 2 tsp. baking soda 2 tsp. cinnamon ½ tsp. salt ¼ c. chopped nuts (omit nuts or chop very finely) ¾ c. canola oil (this amount may be okay for 2 loaves, or reduce the amount of fat and use 1/4 cup + 2 Tbsp each unsweetened applesauce and canola oil) 1 tsp. vanilla 1½ c. sugar 2 c. mangoes, peeled and mashed 3 eggs, beaten (6 whites or 3/4 cup egg sub) 1 c. raisins or ½ c. raisins and ½ c. flaked coconut (omit or use as tolerated)
Directions: Sift flour, baking soda, cinnamon and salt. Mix well and add nuts, oil, vanilla, sugar, mangoes, eggs and raisins. Well grease and flour two loaf pans. Pour in loaf pans and let stand for 20 minutes. Preheat oven to 350°. Bake one hour.
Substitutions: May substitute applesauce, pumpkin pie filling or grated carrots for mangoes. Yields 2 loaves. (Recipe from Vickie Musni)

could frozen mangoes be used? thats about all there is up here cuz when the stores do get mangoes they're often too ripe,ect.

You might have to tweak the amount of liquid you use - frozen fruits tend to have more moisture in them than fresh.
