Baked Pasta with Lemon Chicken
adapted from a recipe in the Dream Dinners cookbook
4 cups cooked spaghetti
1 pound cooked, diced chicken
1/2 cup fresh (or dried) parsley
2 1/2 teaspoons minced garlic
2 teaspoons grated lemon zest
2 teaspoons oregano
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon paprika (or 1/4 teaspoon red pepper flakes)
1/3 cup white wine
1 cup chicken broth
2 tablespoons canola oil
2 tablespoons lemon juice
Spray one 9x13 baking dish with nonstick cooking spray.
In large bowl, stir all ingredients to combine. Transfer to prepared baking dish.
Cover with foil and bake at 350 degrees for 20-25 minutes until chicken is heated through.
Serves 6.
NOTES:
This recipe can be frozen. Mix ingredients and transfer to a resealable freezer bag. Freeze for up to 3 months. Thaw in refrigerator before cooking as above.
You can substitute the same amount of shrimp for the cooked chicken.
We LOVE this recipe! It's mild and tasty - it reminds me of something from a restaurant. The wine gives it a nice depth. Great with french bread!
It's also a very forgiving recipe. Feel free to play with the amount of seasoning, broth, wine, and lemon juice according to your tastes. It always turns out great regardless of how I tweak it!

This looks yummy. And I love the make-ahead-able-ness of it. I could put it all together early in the day then just slide it in the oven at dinner time. Plus I always have on hand the ingredients that go in it.

I don't see the temp to bake this at. Maybe its not crucial since everything is already cooked. I am just starting to prepare this now. If there are no suggestions I was thinking about 325...

So sorry for my oversight - I hope it still turned out well for you! I've edited the recipe - 350 degrees. Since everything is cooked, it basically just needs to be heated through and exact temperature shouldn't be too much of an issue.

Oh, this is wonderful. It's sort of a scampi flavor with a little Greek twist from the oregano. Yum!
I made it just like the recipe says except I used 1-1/2 Tablespoons of dried parsley and I don't think I had a pound of chicken - I used 2 chicken breasts worth which was probably closer to 3/4 of a pound.
