This looks good and I'd love to try it, but I'm not sure about the butter. Is 1/4 cup safe margarine safe to substitute?

1/4 cup butter, softened (2T safe marg + 2T applesauce?) or is 1/4 c. safe marg okay? 1 cup + 2 tablespoons sugar, divided 2 eggs (4 eggwhites or 1/2 cup egg sub) 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup buttermilk (1 cup soy or rice milk + 2 T apple cider vinegar) 1 teaspoon cinnamon
In large mixing bowl, beat butter until light and fluffy, about 1 minute. Gradually beat in 1 cup sugar. Add eggs one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking powder, baking soda and salt. Add to creamed mixture alternately with buttermilk/soured milk just until mixed.
Transwer half of the mixture to a 9x5x3" loaf pan coated with nonstick spray. Combine 1 t cinnamon with 2 T sugar. Sprinkle 3/4 of mixture over batter. Top with remaining batter and sprinkle with remaining cinnamon mixture.
Bake at 350 degrees for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cook 10 minutes before removing from pan to a wire rack to cool completely. Yield: 14 servings
