These are so good~!!! Soft Pumpkin Cookies 2 cup brown sugar, firmly packed 2 teaspoon vanilla 2 1/2 cups canned pumpkin 2 teaspoon baking soda 1/3 cup canola oil 2 teaspoon baking powder 1 teaspoon each - cinnamon & nutmeg (I didn't use nutmeg) 1 cup chopped nuts (opt) 1/2 teaspoon ginger (opt) 1 1/2 cup raisins (optional) * I just use a handful 4 cup all-purpose flour Directions: Beat sugar, pumpkin, oil and vanilla. Sift together dry ingredients. Stir into the pumpkin mixture until smooth. Blend in raisins and nuts. Drop by spoonfuls on sprayed baking sheet, and bake at 350°F for 12-15 minutes. Preparation time: 30 minutes. Leave plain or ice with just a little of tofutti cream cheese.

Hey, not to be a downer, these look pretty healthy and low-fat but they can't be fat-free - there's oil in them!

I agree, they're not completely fat-free, but this amount of oil divided among a couple dozen (or more) cookies will not be very much.

I baked these last night and used dairy-free chocolate chips instead of raisins. Decadent and delicious. I love pairing pumpkin and chocolate. I also made a couple with dried cranberries instead of the raisins. Those were really great, too. Thanks for posting the recipe.

Wow, these were so good. I made them and just substituted a few things: skipped the oil and used an extra 1/3 cup pumpkin, for the spices I used 1tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp pumpkin spice. The recipe made a total of 49 cookies for me. The result was delicious! Thanks for sharing. I would include a picture but I can't figure how to do it on here.
