Waffle recipe

Does anyone know of a recipe that I can use to make waffles with? I checked out the belgin waffle recipe that is posted, but I want one I can make and use the same morning. I bought a waffle mix, that has no eggs, or milk in it, but it isn't settling right with my stomach. It is Buck wheat, and it is okay with me the day I eat it, it is the next day it hits me real bad.

I did a quick search on the web for a "vegan" waffle (vegan because then I knew it wouldn't have any dairy in it). I found this interesting recipe that sounds very safe:
Ingredients: 1 ripe banana, mashed 2 cups water 1/2 cup uncooked oatmeal 1 1/2 cups flour 2 teaspoons baking powder 1 teaspoon cinnamon 1 teaspoon nutmeg vanilla extract to taste (optional) Method: Mix together the mashed banana and water. Add dry ingredients and mix, leaving lumps in the batter. Waffles: Cook on a waffle iron, according to the manufacturer's instructions. Pancakes: Pour 1/2 cup of batter into a hot, lightly oiled frying pan. When bubbles rise through the middle of the pancake and break on the top, flip the pancake and cook until browned underneath. (Note: Test the pan before cooking the pancakes by throwing a few drops of water onto it. If the water jumps around and then disappears, the pan is at the correct temperature.)

Wow. This looks really easy and very safe. Has anyone tried this with success? I might try this tomorrow morning - all i need to get is a banana!

YUM! This recipe sounds magnificent. I gotta try it. I usually use Bisquick because it does not bother me. However, I make it with soy milk and I double-up on the soy milk to make 'em more like Swedish pancakes (my hubby's fave). Bev

I'll bet this recipe would be great with canned punkin instead of the banana? Have you ever tried ihop's punkin pancakes? Oh, BABY! They're so good you don't even need syrup -- and I ask them to leave off the butter.
I'm gonna try this recipe with punkin. Ooooooh!

Okay, I made this batter and the pancakes were gooey in the middle. I had to throw it out. I didn't pour them on too thick and I think I waited more than enought for them. The only funky thing I did was substitue 1/4 cup of flour for cocoa, could that be it? Why didn't my pancakes work out?

I would say that subbing the cocoa was the problem. Cocoa doesn't have the same properties as flour does.

Evie, this happens to me whenever I add frozen blueberries. (I love blueberries, I want to add them to EVERYTHING!) I have to first thaw the blueberries, or, better yet, run boiling water over them. Maybe all your ingredients aren't at room temperature? Bev. Oooh, wait a minute! I've got it! Your griddle wasn't hot enough? Too hot? 400 degrees is what mine is supposed to be at for pancakes. Is that it?
