I have wondered the same thing for awhile about my canned pumpkin. However, I know I have kept my canned pumpkin, once opened in the refrigerator for atleast a week, if not a bit longer and it has been fine. I do notice however that my pumpkin bread is not as flavorful with "old" pumpkin. Hope that helps!

I usually throw away homemdae hummus after about a week - I'm never sure if it's gone bad, but I throw it away just to be safe, because of the garlic. Rancid garlic can actually be poisonous. But... considering how many other commercial products actually have garlic in it, I'm sure the stuff probably does last quite a bit longer than a week. Maybe I'm just paranoid.

Here's a useful food storage guide from the NDSU ag department:
Refrigerator/Freezer Food Storage Chart
I usually keep hummus for a week or two after opening. Canned pumpkin usually three days, but that's because I use it up within that time.

It doesn't take long before canned pumpkin goes bad.
If it stays in the can, it's good for 24 hours (make that 18 just to be safe) after opening, but then you must throw it out.
If it's in a Tupperware container, dump it after 4 days.
Note: This is from my experience of Thanksgivings past.
Your experience may vary.
The best way to store pumpkin (the natural kind) is in a Ziplock or Glad freezer bag (squeeze all the air out when zipping closed).
Store in the refrigerator not the freezer.
As for an open can of hummus, throw it out after 20 - 35 minutes, unless you want to take a chance on getting salmonella poisoning.

Someone told me garlic butter (not powder) is like a preservative, but if it's in a can, hummus won't be good long. 20 - 35 minutes is the expiration for it in an open can. Canned hummus is an excellent potential carrier of salmonella, but then so are hardboiled eggs and baked fish at room temperature. I'd be careful about some chicken as well (black parts indicate disease or illness).
