Super Stuffed Baked Apples

4 large McIntosh or Empire apples, cored 1 tablespoon lemon juice 3/4 cup brown sugar 1/4 cup instant oatmeal mix or rolled oats 1/4 teaspoon nutmeg, a healthy grating 1 teaspoon ground cinnamon 1 or 2 tablespoon soy butter or 2 ounces, 1/8 cup, golden raisins, chopped 1/4 cup chopped walnuts or walnut pieces or pecans soy ice-cream cool whip-lactose free Preheat oven to 425 degrees F. Sprinkle cored apples with lemon juice. Mix next 7 ingredients and over-stuff apples. Bake 20 minutes in a small oven safe dish. Transfer apples to small bowls with a spoon and top with ice cream and cool whip.
I tried this recipe today (forgot to put soy butter and was great without it) and it tastes amazing. Recommend to apple pie lovers!

this sounds delicious... but where can you find lactose free cool whip?

Try Whole Foods. I believe it's called "Hip Whip," and it's in a can. I've never tried it, though.

Cool Whip Light is lactose-free. It does, however, contain "less than 2% of sodium caseinate" which is a milk protein. A lot of people on the Boards can tolerate it as a food additive in such a small amount. I do fine with it. It also has HFCS which I tolerate well now but didn't when I first started the diet.

Lots of whip creams (in plastic bowl) are lactose free. Cool whip is lactose free and store brands can be too. Just read on the back of the bowl. It's written in small font. I am sure you can find lactose free whip creams at any food store. I eat it like ice-cream and it tastes great. Although, it contains HFCS. But I do fine with it.
