Here's two recipes I've tried that passed the taste test -my husband's taste test included!
Banana Blueberry Muffins
Sift and stir: 2c flour 2t baking powder 1/4t baking soda 1/2c caster sugar
Combine in small bowl and beat until smooth: 2T apple sauce 1T canola oil 1/2c orange juice 4 egg whites 2t vanilla 1 large ripe mashed banana 1/2c blueberries (fresh or frozen)
Combine wet and dry and pour into lightly sprayed muffin pan. Sprinkle with cinnamon.
Bake at 390 for about 12 mins or until muffins spring back when touched in centre.
makes 12 medium muffins
Chocolate Muffins
Sift and stir: 1 3/4c flour 1t baking soda 1c caster sugar 1/4c cocoa
Combine and stir: 4T apple sauce 1T canola oil 2 egg whites 1 cup vanilla soy yoghurt 1/2c soy milk 1t vanilla
Combine wet and dry and fold until flour is dampened but not smooth.
Divide evenly amongst 12 lightly sprayed muffin pans.
Bake at 390 for about 12 mins or until centres spring back when touched lightly.
I hope you all like them, I'll be trying some more over the next week and will post them if they are successful!

what is caster sugar, and can the orange juice be replaced with anything? I dont do well at all with orange juice (IBS-D, plus acid reflux sufferer)

I believe the equivalent to caster sugar in the US is powdered sugar but you could probably just use regular white sugar.
As for the orange juice you could probably use a bit of extra milk and/or apple sauce.

i made these muffins over the weekend, and am wondering if it really is 1/4 cup baking soda? they didn't come out at all like i expected (we threw them out)???

Which one are you talking about? The Banana Blueberry Muffins use 1/4 teaspoon and the Chocolate Muffins use 1 teaspoon. Or am I reading the wrong recipes?

i was thinking this over at lunch-and apparently my brain totally read cup for teaspoon (blueberry/banana one)-i checked today also before posting....thinking vacation might be needed for my sorry excuse for a brain today! thank you for replying so quickly though

Kerrie - I tried your banana blueberry muffins today! Yummy! My fiance, AKA Mr. Atkins, is even talking right now about having another. LOL! I've been taunting him (unintentionally of course! ) with Heather's banana bread last week, now this.
Anyway, I just noticed last week when helping Lorna with confectioner's sugar that on www.foodsubs.com powdered & caster were different. I think caster is in the middle of regular table sugar & powdered. I used 1/2 cup table sugar & it worked fine.

Hey All! I wanted to post this recipe I used for Weight Watchers. It's almost too easy!
Chocolate pumpkin muffins
1 box chocolate cake mix 1 15 oz can of Pumpkin
Mix and bake for 25 minutes (or until a toothpick comes out clean) in a 350 degree oven. It's just that easy!!!
I only found out I had IBS last week, so I am still trying to figure out what I can eat and what I can't. These seem to be really great, and you really can't even taste the pumpkin.

Hmmm, ok so im pretty new to bakeing and my bf is new to haveing IBS.. I was wondering what the little "t" and the big "T" 's stand for in measurements.. Is the little t teaspoons and the big T tablespoons or what?! i'm guessing the "c"'s stand for cups.. Sorry if this is a stupid question but i like lots of your recipies and i cant tell what the measurements are. Thanks! ^_^

I just wanted to say thanks for this recipe! I've used it a lot to make snack muffins. I've also used pumpkin with a spice cake mix and that works great as well!
The only thing I do different is add one egg white to the mix just to moisten it up a little more while stirring.
