Butter Substitute

Hi all! I'm brand new to this so sorry if I'm asking a question that has already been answered. (This message board is pretty extensive so some answers take some digging to find.) I have been searching vegan recipes and came across one using soy margarine (nonhydrogenated). Has anyone given this a try? Is it safe to use? Any other butter substitute suggestions for my recipes? Thanks!

I believe that a lot of people use canola oil as a sub. At least that is how I typically find Heather's recipes in her book.

There are quite a few substitutes out there. Smart Balance is vegan, there is soy margarine, rice margarine, and Earth Balance. Check out the soy area of your local store. I know Smart balance is in the regular area as well.
