I have taken so many recipes from this website when I found one that was IBS safe I wanted to pass it on.
Turkey/Chicken Curry (Makes about 4-6 servings)
Ingredients 3 stalks celery chopped 1 onion chopped Bite Sized pieces of Turkey or Chicken (I usually use leftover chicken breasts or a small turkey breast) 3 cans chicken broth 8 oz. Tomato Paste Curry Powder
1. Saute celery and onion 2. Place Turkey/Chicken in pan with celery/onion 3. Add Chicken Broth 4. Add Tomato Paste 5. Stir everything up well 6. Stir in Curry Powder 1 Tbsp at a time. 7. Simmer for 15 minutes. 8. Keep adding Curry to taste. (We usually use 2 Tbsps) 9. Serve over rice and enjoy.

I'd like to try this ... it sounds good, but isn't 3 cans of broth a lot?

That is what my husband thought the first time we made it, but the broth simmers down and mixed with the tomato paste gives it just the right flavor.

How much is 3 cans of broth since we dont have your kind of cans here in Europe?

I'm am guessing, but I would assume it's about 6 cups total of broth.

What would you suggest serving with Curry Chicken? All I can think of is rice and beans. I would like to make this recipe Sunday and any ideas would be appreciated.
