Hi I found this blueberry box muffin mix at the store and was wondering if it was safe. It says it has only 1.5 grams of fat. The directions says to use 1 egg ( i use 2 egg whites 1 cup water and 3 table spoons of veggie oilI just add 1 and a 1/2 could you sub apple sauce for this? It looks safe to me but heres the ingredients: enriched bleached flour. (bleached flour, niacin, iron, thiamine mononitrate riboflavin folic acid) sugar, blueberries(packed in water) partially hydrogenated vegetable shortening (contains soybean oil) sextrose food-starch-mofified, leavening (baking soda sodium aluminum phosphate) calcuim carobonate, salt, artifical flavor, wheat starch, xanthan gum.
Please let me know they smell so good thanks

Calcium carobonate is a milk product. There are some recipes on the recipe exchange list, but here is one more.
Blueberry Muffins 1 3/4 cups flour 1/4 cup sugar 2 tsp baking powder 1/2 tsp salt 3/4 blueberries 1 egg ( use egg white/eggbeaters) 6 tbsp veg. oil (you could use less, add some applesauce) 1/2 water
Preheat oven to 400. Line muffin tin with paper. Sift the flour, sugar, baking powder, and salt together into a bowl. Stir in blueberries. Mix the egg, oil, and water together stir them all at once into the flour-blueberry mixture, continuing to stir just utill all of the dry particles are moistened. Divide the batter among the 12 muffin cups. Bake for 15-20 minutes.

Calcium carbonate isn't a milk product. It's a mineral that comes from non-dairy sources.

As said in the Milk Free Kitchen- "Highly processed milk product. They are used as fillers to improve flavor or texture, or to prolong the shelf life of foods. Along with, Calcium or any other lactate Casein Lactalbumen Lactic acid lactoglobulin lactose sodium or any other sort of caseinate.
I usually stay away form it because it comes form milk and I'm VERY VERY sensitive.

Hm. I've never heard that! A lot of people on the boards have been taking calcium supplements in the form of calcium carbonate, which is helpful to those with D because of its constipating effect. It's even recommended by Heather. Perhaps some forms come from dairy but others from non-dairy sources (such as shellfish or lime)?
I hope you don't mind if I ask about this on the IBS Diet board. Maybe we can get some answers from Heather or other folks.

I would just subsitute all of the oil with applesauce or use 1/2 and 1/2.

Something else you can try.... substitute mixed berries for the blueberries. Costco sells big bags of frozen berries. They taste just as good!

Did you add a tablespoon of salt instead of a teaspoon?
