Hi friends. Does anyone have recommendations on great cook books (other then Heather's)? I know we have the recipe exchange index, but I am a strict pesca-vegetarian and that limits my use of the index and Heather's book. I need more sources. Thanks for your help and Happy New Year!

One of my favorite cookbooks is "Almost Vegetarian" by Diana Shaw - a fantastic low-fat cookbook. Most of the recipes are vegetarian, and those that aren't are easily converted to be so, by substituting tofu for chicken, for example. Many of the recipes do contain dairy, but it's easy enough to just use soy substitutes.
I've liked the Moosewood books in the past, too, but I don't recall off the top of my head if they were low-fat recipes or not.
Once you get the hang of cooking for IBS, you'll find that it's really easy to convert many, if not most, recipes to be safe and still very tasty. I still use my old (unsafe) cookbooks most of the time, modifying the recipes for fat content and trigger foods.

There is a low fat Moosewood cookbook. I have a copy, and it does come in handy now and then. Used it last night in fact for a tuna steak recipe.

I'm really enjoying the stuff my husband has been making using "Everyday Mexican" by Rick Bayless. He gives "riffs" for most of the recipes, often including stuff that makes the recipes safe for both IBS and diabetes. We tend to use the chicken version of things, but he also has lots of vegetarian suggestions.

I'm also a vegetarian, and I LOVE the vegan cookbooks by Sarah Kramer: "How it all Vegan", "Garden of Vegan", and "La Dolce Vegan". Sometimes you have to adjust for fat content, but I use them all the time!!
