I'm trying to help my mom come up with a Xmas Eve, Xmas Day and New years menu that I can eat from ( I am very fortunate to have parents who will change a whole menu for me!) I've beeen looking over recipes on the boards but wanted to know if anyone did something different or other holiday dinners that aren't posted! Happy Holidays!

My mom is making her traditional Christmas ham, but she knows I had a horrible attack after eating it last year, so she's also going to make a crock-pot chicken (just a whole chicken roasted in the crockpot all day with salt & pepper on it). You might also suggest some safe mashed potatoes (use non-dairy margarine and milk or even just some salt and water... not great, but not bad if she doesn't have the non-dairy products), rice, or most any type of veggie that isn't cooked in fat or spicy seasonings. Just make sure you have plenty of SF so you can eat any IF veggies. Maybe you could offer to bring a safe dessert.
As for additional meals, you could use the leftover chicken to put in a delicious veggie soup. Yum!

My mom is coming in to my place for Christmas, so I'm planning the menu. We're going to have fish (depends on what looks good at the store) for Christmas Eve, probably with rice, and turkey for Christmas Day. We're going to try the walnut tart in Heather's cookbook.
