Source: WEIGHT WATCHERS. I just made these, and they're delicious. I added raisins, which increases the points (so 1 cookie is all I can have on WW). For IBS purposes, unfortunately I do not have the nutritional information, but I figured each cookie contains 2/3 teaspoon soy butter (or fat). The cookies came out flatter than the picture shows. See my photo, below.

They ARE fabulous. I was very pleasantly surprised. However, I gotta confess, I'm having a hard time not diving into them.....

Dangit.... I tried to come over for a taste test but with the borders closed the traffic was so bad I had to turn around so I could make it to the gym... heheheh JUST KIDDING!!

I've been making oatmeal cookies for over 40 years now -- they're hubby's fave -- and I can honestly say these are the best I've ever made or ever HAD. It's the spices, just a perfect blend.
Steather, I'm sorry for killing you. I just can't help myself. You'd better brace yourself; there's more coming.....

WW Oatmeal Cookies
1 cup brown sugar, packed
3/4 cup unsweetened applesauce
1 large egg white -- lightly beaten
2 tablespoons vegetable oil
2 tablespoons vanilla extract
1 cup raisins
2 cups rolled oats
1 cup sifted cake flour ( I personally would just use regular white flour )
1/2 cup whole wheat flour ( I personally would just use regular white flour )
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
Position rack in the center of the oven and preheat oven to 350 degrees F. Line baking sheets with parchment paper or coat with nonstick cooking spray.
In a large bowl, whisk together sugar, applesauce, egg white, oil and vanilla until smooth. Stir in raisins.
In a medium sized bowl, stir together oats, cake flour, whole wheat flour, baking soda, cinnamon and salt. using a wooden spoon, stir the dry ingredients into the wet, mixing just until blended.
Drop the dough by tablespoonfuls onto a prepared baking sheet, spacing cookies about 1 1/2 inches apart. Bake for about 15 minutes or until lightly browned. Transfer cookies to a wire rack and let cool.
Per serving: 81 Calories (kcal); 1g Total Fat; (12% calories from fat); 1g Protein; 17g Carbohydrate; 0mg Cholesterol; 69mg Sodium
Food Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 0 Vegetable; 0 Fruit; 0 Fat; 1/2 Other Carbohydrates

I don't remember the particulars of the recipe Bev posted, but I do remember it had a large amount of margarine in it, and it did not have applesauce or oil. Or when you reposted did you take out the margarine and replace it with the applesauce/oil?

If you Google "weight watchers oatmeal cookie recipe" you'll get a lot of hits. Though most of them probably aren't officially sanctioned. I think there's even another WW oatmeal cookie recipe in the index.
In her notes for the recipe, Bev says that each cookie contains 2/3 t soy butter. Since she doesn't say anything like, "Oh, I subbed soy butter instead of applesauce and oil," this is another reason why I don't think it's the proper recipe. Plus later in the thread she says how the spices are a "perfect blend". I don't know about you, but I'm not sure I would classify 1 t of cinnamon as being a perfect blend of spices.
Anyway, just trying to justify my memory and prove that I am not crazy after all.

Oh, look at that. I didn't even read what Bev said about the soy margarine - just saw the little blue squares with question marks and skipped the rest. And I have to agree that cinnamon - wonderful as it is - is not a perfect blend of spices.
Okay, forget I stuck my nose into this and you guys pick up where you left off in this discussion.
