5 minute chocolate pudding!

I just found out that I have IBS less than a year ago but it feels like forever since I have had to give up my chocolate and sweets! One day last week I decided to make pudding using just the Jello box mix chocolate flavor(Fat-Free, Sugar-Free). I mixed one large box with 2 cups rice milk (it calls for 3 cups of milk but I like it thicker) The moment I tasted it I was amazed! I hadn't had chocolate in so long and I felt like I was eating brownie batter! The first time I used chocolate rice milk but found it was a bit too chocolaty with the chocolate mix so the second time I used half chocolate half vanilla (one cup of each). I'm sure you could substitue all different flavors, such as vanilla mix or banana mix with vanilla rice milk, or even use soy milk. Anyways, it is very simple (and tastes good even w/out refridgerating although the recpie suggests 5 minutes before eating) it was my first "dessert" recipe I have come across and fell in love with while having IBS and I figured I'd post it in hopes of it helping out others with their chocolate cravings!! Also, once you make the pudding you could layer it between graham crackers and top with cool whip (fat free sugar free) like a s'more! This version may also help with the weird aftertaste that I experienced (the one downfall about the recipe I discovered however in my opinion the taste of the actual pudding is worth it!) enjoy!

Yum, chocolate! Be careful with this, though. Most "sugar free" foods use artificial sweeteners and those can be tough on IBS.
If you love chocolate, have you tried the Anti-Depressant Brownies? They're yummy and they freeze pretty well. Also, I love the Ultimate Chocolate Pudding Brownies and I'm pretty sure everyone else in your family will be happy to help you eat them.
