Place 1 cup freshly roasted almonds in a glass jar. Cover with 4 cups water. Tightly close the jar. Refrigerate for 1 day or no more than 2 days. Pour into blender and blend until smooth.
http://homecooking.about.com/cs/atozfoodindex/ht/almond_milk.htm Strain liquid from pulp through cheesecloth, applying pressure to squeeze out all liquid. Retain the almond paste pulp for other uses.
Tips:
Use almond milk in recipes or as a delicious drink by itself or with a little honey and vanilla. The almond paste pulp can be used to top cereal, vegetables, or rice. 1 pound shelled almonds = 3 cups halves or 4 cups slivered.

Thank you so much Ruchie! Your a dear!
Is it okay to just eat almonds in small amounts? I love those Jordon almonds candies. Of course they aren't in my diet plan.

Well, I went to this great store today and I found all kinds of great stuff. I found almond pulp, Pacific Almond All Natural, Non-Dairy Low Fat Vanilla, and Pacific Almond All Natural etc...Original. Which do you prefer the Vanilla or the plain original?

I'm so excited you found it....yippee! I think I tried the vanilla last year and it was quite yummy. My tummy didn't like it at the time though....so I haven't had almond milk since! I hope you'll let me know which one you try and like...cause I may end up giving up soy if I'm diagnosed with hypothyroidism (quite likely I will be!)
Did the almond milk have any sugar in it? I'm wondering if I should try to find some while I'm off sugar...?
I think you can eat almonds and other nuts crushed and sparingly. We have to be careful because of fat content. Also, make sure the almond milk isn't too fattening...I can't remember if I had to drink it sparingly b/c of fat content.
Please let me know how you make out...I'm so glad you found it ok!
*hugs*

The Vanilla one has per cup: 2.5g 4% Total Fat Sugars 11g.
The regular one has per cup: 2.5g 4% Total Fat and sugar 7g.
It says that the sweetner is Brown Rice Sweetener (Filtered water and brown rice) and the vanilla has ginger in it, and they both have Carob Bean gum and a bunch of stuff I can't pronounce. I hope it's going to be okay for us because I got one of each and am really looking forward to my smoothie.

Hi, this is my first post! I'm gonna try to find almond milk (I love almonds!) at the health food store today - and make it a staple in my diet. Can it be used as a substitute for soy or rice milk in most recipes for smoothies, etc?
