Heather, I just tried making your 5 Minute Pumpkin Pie . I couldn't believe how much it tastes like the fat-full, rich version. I don't think anyone would even know if I substituted it at Thanksgiving. I made it without crust this time, next time I'll try the low fat crust recipe I posted here last week.

Karin, thanks for sharing your experience! I'm planning to make it on Thanksgiving, too, and I was wondering if anyone here had tried it. I can't wait to have pumpkin pie again!!

Ok. So I'm going to make the 5min Pumpkin Pie tomorrow..and I'm really excited! It's been my favorite since before I can remember. My question is..Karin or anyone else..have you tried the low-fat pastry crust? Do you like it better than a grahm crust? Thanks in advance..

Check back later tonight for a critique by my husband who hates anything "healthy".......lol. The crust tasted good to me, but we'll see what he says. I did add 1TB of water to the recipe though and I sprayed it with butter flavored Pam before I baked it (I liked Mags' idea).

Well, it wasn't as flaky as I would have liked. Part of the problem is that I don't think I rolled it out thin enough, it was kind of tough on the bottom AND maybe I shouldn't have added the 1 TB water. A pastry site said: a minimum of ice water is added until the dough barely comes together".

Usually the ice cold water and minimum mixing is due to the butter content in pastry..but I don't know. I'll give both a try and make two, then post my results tomorrow. Thanks again!

Well..I made my pie with a grahm crust and it looks lucious! I've been dying to try it..but my gut has been in a funk for the last few days. I'll have to abstain until the festivities tomorrow! Happy Thanksgiving everyone!

Mine turned out great. How about yours? Everyone loved it. I have to make another pumpkin pie for my parent's. We do our Thanksgiving with them the next day. Two days of Thanksgiving.
