Mexican Rice
1 1/2 teaspoons vegetable oil
1/2 small small onion, diced
2/3 cup uncooked long-grain rice
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
3 ounces canned diced tomatoes (or salsa)
1 teaspoon salt
1 1/2 cups water
DIRECTIONS:
In a large saucepan, heat oil over medium heat. Stir in onion and saute until translucent.
Pour the rice into the pan and stir to coat grains with oil. Mix in cumin, chili powder, tomatoes, salt and water. Cover, bring to a boil then reduce heat to low. Cook at a simmer for 20 to 30 minutes or until rice is tender. Stir occasionally. allrecipes.com

Heidi, I LOVED this!!! It was so good, and I can't explain why! LOL It was like plain but flavorful all at the same time....as in not real spicy or anything. I did use the plain diced tomatoes instead of salsa. Hubby has reflux so gotta watch the spices. But, he was fine with this. (Although not thrilled...he's not a big rice person though. But, he dutifully claimed dinner was delicious! hehe)
It went great with Sweet Tequila-Lime Chicken. I'm looking foward to the leftovers. I think I'm going to try a rice/chicken wrap!
I will definitely be making this again....thanks!

I forgot about this recipe lol. I have chicken tacos in the crockpot for tonight but this might be a nice addition if I actually can find time.
