warning- small amounts, high in fat from the chocolate...
non dairy, pesadic chocolate chips/chunked elite dark bars...
standard 12" springform
16 egg whites beaten stiff
melt 16 oz chocolate, fold in carefully, then spoon into springform.
bake at 300 for 1 hour until just set in the middle (will cook slightly more when it comes out.. )
you will need to cut it out of the springform around the edge, but yummy! serve with fruit, merengues, or melted chocolate drizzled over it or a combination of the above...
one note- this isn't very sweet, you can add sugar if you prefer sweet to rich and sinful!
actually this would be good with the apple based whipped topping recipe too- hrm, hadn't thought of making that this year, but I think I'll buy a few apples for it! will be good with all 3 desserts, but about half the sugar needed..

very yummy, but has 1 hard to find ingredient- blueberry juice (check trader joes, our pesadic grocer had it amazingly!)
blue berry juice- 1-2 cups, until right consistancy dates- 1 pound raisins- 3-6 oz (to taste)
Put in the blender and puree until smooth. Yummy, super sweet and disapeared in its entirety VERY quickly last year!

this one is another easy in one pot dish and I'm goign to try it in a crock pot this year....
"meat balls" small balls of ground turkey- lean
stew: 2 large cans of crushed tomatoes veggies to choice (mushrooms this year) spices to taste - parsley, basil, onion, garlic, rosemary/sage/chipotle for some added flavors.. 1 batch of matza balls.
simmer the stew for at least 2 hours, then add matza balls, cook IN THE STEW according to directions, and then serve.
YUMMY! pesadich and sorta like spaghetti, but not quite... something mom came up with when we were kids.

Oooh, I remember having this when I was a kid, albeit with beef meatballs. It was one of my favorite Pesach things, along with chocolate macaroons....

That's the amazing thing about ground turkey - it's seems pretty indistinguishable from beef! Maybe I'll have to get my husband to make his IBS-friendly modified meatloaf and post the recipe here....

my meatloaf and mashed potatoes roll up is pesadic.. hrm... nothing in there we can't have during passover...
