Vegan Tofu Russian Dressing (Makes about 2 cups dressing)
This dressing is absolutely amazing. I couldn't taste the tofu at all. It was the most flavorful and chunky dressing I've ever made.
1 (12 1/3 ounce) package silken tofu (I use lite) 2 1/2 tablespoons apple cider vinegar (or lemon juice) 1 1/2 tablespoons sucanat (or regular sugar) 1 teaspoon salt (I used less) 1/2 teaspoon garlic powder 1/4 teaspoon dry mustard 3/4 cup ketchup 3/4 cup sweet pickle relish
In a food processor or blender mix the tofu, vinegar, sucanat, salt, garlic powder, and dry mustard. Run the food processor for a while, scraping as you go, until the mix is smooth and creamy. Put the mix in a bowl. Add the ketchup and pickle relish and stir until well mixed. Chill until ready to use. I would recommend letting the flavors blend for at least a few hours. This will last, refrigerated, about a week.
