Blueberry Muffins

Hey everyone! I checked the index and i saw Vegan muffins, but I was just in the mood for some good old-fashioned ones. Do you think the store bought ones like Jiffy are OK or does anyone else have a good recipe? thanks!

Peaches, this is my favorite blueberry muffin recipe that I've converted to meet my needs:
1/2 cup margarine, softened (I use unsalted margarine because it's lactose free and doesn't bother me, but you could sub soy marg. Oil would probably work too) 3/4-1 cup sugar 4 eggs whites 1 teaspoon vanilla 2 cups flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup soy milk 2 1/2 cups blueberries (may use frozen) 2 teaspoons sugar (for topping)
1. Cream margarine and sugar; add egg whites and vanilla. 2. Add dry ingredients and soy milk alternately. 3. Mash 1/2 cup blueberries and add to above; add rest of whole blueberries. 4. Grease muffins cups; fill 1/2 full. 5. Sprinkle sugar on muffin batter. 6. Bake at 375 degrees for 30 minutes. 7. Let cool in pan for 30 minutes before removing.

I just made these today and they are so tasty!
I used the splenda/sugar combo for baking and it worked great.
I only ended up using 1 1/2 cups of blueberries. It seemed like a lot when I added them so I wasn't sure about putting another cup in. But so good!!

I have to say, I would stay far far away from Splenda no matter your level of IBS or if you have any wierd GI issues. Far far away.

Banana Chocolate Chip Muffins
1/4 cup margarine 1/4 cup applesauce 1 cup sugar 2 bananas 4 eggs whites or 1/2 cup Egg Beaters 1 teaspoon vanilla 2 cups flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup soy milk 1 cup chocolate chips 2 teaspoons sugar (for topping)
1. Cream margarine, applesauce, sugar and bananas; add egg whites and vanilla. 2. Add dry ingredients and soy milk alternately. 3. Fold in chocolate chips 4. Grease muffins cups; fill 1/2 full. 5. Sprinkle sugar on muffin batter. 6. Bake at 375 degrees for 30 minutes. 7. Let cool in pan for 30 minutes before removing.

Wow! I made these muffins (in a mini-muffin tin) and they were so yummy that the whole family ate the entire batch in 24hr! These are great!!!!

What is a safe margarine brand I can buy at wal mart? they have no soy products(at wal mart in this town,don't know about anyone else's) except milk.
