I'm on kind of a veggie soup kick -- mostly I'm trying to eat more veggies and soup is the perfect food, as far as I'm concerned. Came up with this last night, with a little help from allrecipes.com.
For one:
1/2 peeled cucumber 1/4 green bell pepper 1 lemon white pepper, salt, onion powder, garlic powder, paprika (I used this amazing smoked spanish paprika and it was incredible in the recipe) tobasco sauce soy yogurt (about 1/2 cup).
Seed the cucumber and place all the seeds in the blender, with lemon juice. Dice the cucumber and put half of it into the blender and the other half into a medium bowl. Do the same with the green pepper. Run the blender and pour the mixture into the bowl with the diced veggies. Add more lemon juice and all the seasonings. Stir in about two tablespoons of the yogurt. I confess that I used "real" yogurt (one of the few cheats I can get away with). I used Dannon Light 'n Fit in Lemon Chiffon. If you're using soy, use plain and add more lemon juice, or use a lemon variety. Stir it all together and serve cold. Not exactly a winter soup but so amazingly yummy.
