Basmati Rice with Onion and Ginger

Just saw this in "everyday food" and had to share! In this case, I would use the oil, because it seems like it'll make a difference in the texture of the finished dish, but it's totally up to you.
1 tablespoon canola or olive oil 1 large onion, diced 1 large carrot, shredded 2 garlic cloves, minced 1 tablespoon minced peeled fresh ginger 1 cup basmati rice 1 3/4 cups water 3/4 tsp coarse salt
In a medium saucepan, heat the oil over medium-low heat. Add the onion and carrot and cook, stirring frequently, until onion is very tender, 15-20 minutes. Add garlic and ginger, cook 2 minutes.
Add rice, stirring to coat. Add water and salt, and bring to a boil. Reduce to simmer, cover, and cook until rice is tender, 17-20 minutes. (Add more water if the pan gets dry.) Serves 4.

I finally tried this last night, and it is DELICIOUS! I didn't have basmati rice on hand, so I used regular long-grain white rice and 2 cups water, and it was perfect. Yum!

Made again tonight for dinner.... used Pam in place of oil for cooking the onion & carrot. The decreased the calories by 120. LOVE THIS DISH!!

Yummy. I had this last night, as an accompaniment to Baked Chicken with Soy Ginger and Plums/Peaches it was delicious with it.

I made this last night and it's yummy - very different.
I served it with the Baked Chicken with Soy Sauce, Ginger, and Plums (I use peaches). I love the chicken and I really like the rice but I don't like them together. I prefer plain rice with the fancy chicken and I think this rice would be great with a simpler chicken dish - maybe marinated in teriyaki sauce and grilled - or even with fish.
