This is a favorite of mine...totally safe too.
This has become my winter comfort food! You can find minced ginger in your local grocery store...I found mine in a tube and it is wonderful! Alicia didn't have a name but said it comes from the Phillipines...
Something Filippino
1 skinless, boneless chicken breast, chopped into small pieces 1 tsp oil 1 small onion, finely chopped 2 tablespoons minced ginger 1 clove minced garlic 2 + cups water about 3 or 4 chicken bouillon cubes 1 cup rice salt and pepper soy sauce lemon juice
Saute the chicken and onion in the oil until cooked. Add ginger and garlic and saute until fragrant - about a minute or two. Add water and bring to a boil. Add rice and bouillon cubes. Cook until the rice is done, about 15 minutes. Add a bit more water if needed. Consistency should be soupy-stewy - a bit on the runny side. Serve in small bowls. Add salt and pepper, and soy sauce and lemon juice to taste (about a sprinkle of each).

Yes I did and it came out ok. The chicken fell apart probably more than regular cubed would but it still worked. Also I make chicken salad sandwhiches with low fat mayonaise or if you don't like mayonaise you could always use honey mustard instead. I also use it for chicken pot pies.

I've used the Swanson 99% fat free chicken so far in a quesadilla, and to make tacos. I just looking for some more uses, because its so easy to have on hand.
