Casey (or anyone else) - think this is doable?

I saw you posted that Duncan Hines and Jello made safe mixes. Think this cookie recipe would work for IBS then? If so they are AWESOME!!! Let me know what you think....
Lemon Snowflakes
1 pkg lemon cake mix with pudding (If Duncan Hines makes safe lemon cake and Jello safe pudding, I heard you can just add pudding mix to the cake mix if you can't find a mix with the pudding already in it, so this may work) 2 1/4 c Cool Whip (thawed) (just use FF kind if you can tolerate Cool Whip) 1 egg (use 2 egg whites or egg beaters) confectioners sugar
Combine mix, Cool Whip, and egg. Beat with mixer on medium until blended. Batter will be very sticky. Drop by teaspoonful into sugar. Roll to coat. Bake at 350 F 10-12 min until lightly brown.
Yield: 5-6 dozen small cookies

I think if you can tolorate the cool whip and you find save mixes it should be ok... but send them to me just to be safe! hehehe

As long as you can tolerate the ingredients in the mixes and the Cool Whip, I don't see why not! Fat-wise, they look like they'd be fine... just don't eat a ton of them, since there IS fat in the mixes.
I'll have to try that one! Yum!

I just made them as part of my Christmas baking... holy cow... I had to remove myself from the kitchen so I'd stop eating them! LOL!

i can't quite picture how these'd look baked - the consistency of the batter sounds interesting, & different. if they're not all gone and it's not a huge trouble, i'd love to see a picture.

If I thought they'd hold up to mailing, I would! I have no idea why I'm making so darn many cookies! LOL!! But I think they'd be crumbs by the time they got to you!
You'll just have to make your own!

I gotta tell ya, they didn't come out at all like I was thinking they would... I thought they'd be cakey and puffy... but they're crisp on the outside and chewy inside, and... well, you can see that the powdered sugar makes them crackly.
And yes, there ARE more than 3 left! I just didn't feel like getting them all out of the cookie jar!

I also used a whole egg, not 2 egg whites, mostly because I was lazy... the 5 or 6 grams of fat isn't going to make that much of a difference spread out over that many cookies.
One tip: Use two spoons when shaping the cookies, rather than getting your fingers into it. Melissa's not kidding when she says the dough is *sticky*. I used one spoon to scoop up the dough, and the other to push it off the spoon and to roll it in the sugar. Otherwise, it's a huge mess - LOL!

LOL, glad you liked them! These are usually one of my standards, because they are so easy.
Warning on the Cool Whip though...it's now made with milk. I figured this out in fall when I made HanSolo's pineapple cake and used it for frosting. I couldn't figure out why my tummy didn't really appreciate it till I saw milk listed in the ingredients. It used to be frozen NON-DAIRY topping, but it doesn't say that anymore. I want to check the store brand, but haven't gotten around to checking it yet.
