I found it!!! It was rather easy to find, in the healthfood section of my local grocery store (zehrs).
I tried the rice parmesan flavour, tonight, and IT'S AWESOME! It doesn't taste like rubber or glue like some of the fake stuff I've tried. Great texture.
I also bought the mozzarella to try when inspired.
So, my conclusion is YOU ARE RIGHT re: rice cheese.

I'm so relieved you like it! And happy! It's so nice to find something fake that tastes decent!
You make my second convert (that I know of). I advised it to a lady at my support group and she came back to the next meeting happy with it also.
I can't believe you found it at your local grocery store...you're so lucky!!!

Weird, I know. But my local store has quite a well stocked health/organic food section!
Are the mozzarella and cheddar flavours any good?
I haven't enjoyed the pleasure of watching things melt in so long, not to mention eating them and having them taste good and not make me sick.

They are really good. The cheddar doesn't have the sharpness (I liked extra sharp cheddar), but it is still good. And they melt great!
I like to make Baked Mozzarella Sticks with the mozzarella ones. And the mozzarealla is good on a sandwich, on crackers, and shredded on no-cheese pizza. Hubby had it as a grilled cheese the other night and said it was very good.
I've just recently started using the cheddar. So far the Baked Mac & Cheese was awesome! And, I've also had it on crackers. My next experiment is going to be melted in a tortilla like a quesadilla.

Thanks. Those look supremely yummy.
I'm terrible, but being single, I often eat side dishes/appetizers for dinner/lunch or an assortment and just sort of mix and match.
Everyone makes fun of it, but hey...it is fun and fast.
This would rock with zucchini or eggplant (or both!)

And eggplant too, but I really love zucchini sticks! Do you think it would work breading it that way and baking it? I may have to experiment sometime.
I used to do the same thing all the time eating snacks/appetizers combined for meals. I still do sometimes when my husband is not home for dinner.

I just sprinkled it on at the last few minutes of lunch prep. Wow. Awesome. I wouldn't bother with an egg-wash. At most a little squeeze of fatfree Italian, but totally unnecessary. Basically I sprinkled it on at the last few minutes of baking/broiling. There is enough moisture in zucchini/eggplant to make it stick. I ate it more as a kind of warm salad. I'll have to try it with different "cuts" of the veggies, sometime.
