Really easy, really quick ,really yummy muffins!

My mom just gave me this recipe from a friend who made them at a party. You need:
1 can of pure pumpkin (the big can 29ounces) 1 box of safe cake mix any flavor you want (I used Duncan Hines white cake) 1/2 cup of eggbeaters
Mix all the ingrediants together in a bowl and pour into two muffins tins. Bake at 350 for about 30 minutes. Mine were done after 20 but my oven cooks fast so I would just check at 20 minutes. They are very light and yummy.
Other suggestions of flavores to use of the cake mix were spice, devil food cake, and yellow. I would have made them with the devil food cake but all I had was white cake mix. They are really yummy and great for a snack or breakfast!

Just a quick note about these! Store them in the refrigerator or they go bad really quick. It's because of the pumpkin!

Oops, I didn't read the recipe right. I poured the whole thing into 12 muffin cups and had huge muffins that took forever to cook. LOL. They taste great though!

He He! I do that all the time! I have messed up more recipes like that! Make sure you store these in the frig they will go bad if you don't! Glad you liked them!
