I'm going to try Pan-Roasted Salmon in Mango Juice.
I'm also making Tandoori-spiced mango shrimp, but I make that one at least twice a month.

It's Mac's birthday tomorrow (he'll be 24, he's old hehehe ), so yesterday I made Sweet Cherry Almond Cake from EFI, and tonight I'm making Chicken Stuffed Shells , both with modifications. Mac has class tomorrow night, so the birthday festivites are this evening.
For the cake, I left out the almonds, and added an extra 1/3 cup of flour. I also don't own a springform pan, so I made it in an 8x8 pyrex. Smelled yummy. For the shells, I'm subbing Quorn chicken tenders for the real chicken, and I'm probably adding some spinach per *Melissa*'s suggestion.

Last night week had Shell's Turkey Meatloaf with Garlic Mashed Potatoes - yummy (leftovers for lunch!). The rest of the week looks like this:
Tonight - Garlic Mashed Potatoes with Schwans Oven Fried Chicken (yummy w/no triggers!)
Tuesday - Zippy Shrmip Linguine
Weds - Colorful Ground Turkey Rice (a recipe I need to post - yummy!)
Thurs - Peking Chicken Burger
Friday - Saucy Skillet Fish - this is a new recipe I am modifing. If it is any good, I will post it later.
Anyway, I usually plan out my menu for a full week and there it is. By the way - I love the meatloaf, its the best!!

By the way - I also made the Lemon Glazed Sticky Bread and the Carrot Cake from the EFI for dessert/snacks this week.

This week I'm trying Shell's Phillipine Chicken in the slow cooker. It's at home cooking right now as a matter of fact! So, I'll hopefully have results posted tomorrow.

It's been awhile since I've visited the boards. The weather finally got cool enough to be in the mood to cook again. So I've been on a cooking rampage. This week we've had
Chicken Stuffed Shells I absolutely loved them. I added some spinach and some soy cheese to the mixture. This dinner's a keeper!
Peking Chicken Burger I used turkey for these. I've tried to impress my boyfriend with a variety of turkey burger options over the past 5 years. This was the only one he ate and actually enjoyed. Finally!!
Baked Chimichangas I loved how easy this was to throw together after a work day. My boyfriend is Columbian and was a little critical of the recipe, but was hungry enough to eat 3 of them.

Well, life seems to be a bowl of applesauce lately, and as I've never made it before, I think it's about time!!!
So, that's the project of the week, following the guidelines in the Newsletter archive. Actually, this is totally my speed and for me--I'm really not a baked good fan and well...I LOVE THE SMELL PERVADING THE HOUSE. I bought a bag of galas today, expressly for that purpose. I love hot steaming applesauce with cinnamon. Yes, I'm a simpleton.
Also, I intend to make a few NORWEGIAN APPLE PAN PIES as they have been specially requested by fans in my family for repeat performances. Ditto for BROWN SUGAR BANANA BREAD.
Now, if only I can keep from eating all the bananas and baking fruit.
ROTFL! I'm a baking virgin, but it just smells so wonderful and making people fat and happy feels good.
