Oatmeal Bread recipes

Say, does anybody have any simple oatmeal bread recipes? I did a search and it came up negative. -Bob

If not, you should!It has some awesome recipes on it, including some oatmeal bread and muffins. Here's a link Kree's IBS safe recipes
The bread recipe she listed requires a bread machine, though, which most bachelors don't own...or shouldn't I generalize! Heck, I don't own one! I'm sure Kree could help you or I think Little Minnie eats an Oat Bread. Not sure if she buys it or makes it though.

Hi Beth, Yes, you're right, I don't own one<laugh>. Maybe I should go out and get one. Aren't they just for making yeast breads that rise? The kind of oatmeal bread I was thinking of would be more cake like, like a banana bread or Heather's zuc bread. Thanks for your help. -Bob

There's a Maple Oat Bread recipe in "The First Year". I haven't tried it. It has 1-3/4 cups flour and 1 cup oatmeal. I don't think it's anywhere on the Website (although I sometimes can't find stuff that's out there), but if you want the recipe I'll post it for you.

For this recipe I personally would not add raisins and would use 2 cups of white flour instead of one white and one wheat. I haven't tried it so I don't know what it would be like but if you do let me know!!! Beth

From "The First Year"... This recipe is delicious! I prefer it with the pecans, but I've made it without and it's still really tasty.
Maple Oat Bread 1 3/4 cups all-purpose unbleached white flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2 egg whites 1/4 cup canola oil 1/2 cup maple syrup 3 tablespoons packed brown sugar 1 1/2 cups soy milk blended with 1 tablespoon vinegar 1 cup regular or quick rolled oats 1/3 cup finely chopped pecans or chopped dried cranberries (optional)
Preheat oven to 350 F. Lightly spray a 9x5 loaf pan with cooking oil. In a large bowl, sift the flour, baking powder, baking soda, and salt. Whisk together until blended. In a medium bowl whisk the egg whites with the oil until smooth. Whisk in the maple syrup, brown sugar, and soured soy milk. Stir in the oats. (Add pecans or dried cranberries) Add wet ingredients to dry and stir with a wooden spoon until just combined. Pour into pan, smooth top, and bake until golden brown and a tester inserted into center of loaf comes out clean, about 1 hour. Cool on rack in pan for 10 minutes, then turn out of pan onto rack and cool completely before slicing. Freezes beautifully.

Thanks Beth! It looks pretty good. If I try it I'll let you know. I came up with my own recipe yesterday that is similar to this, and it turned out pretty good. I'm going to post it when I get a chance. I see you have a cute kitty. I have two (brothers) myself along with the dog in the pic below . -Bob
