Now it's not working! Darn, they were so cool looking and each "cube" was equal to exactly on T, so no cutting and measuring required! Just pop out a T of the herb in the recipe.

For most recipes, a tbsp of water isn't going to make a difference, and you can just throw the cubes right in, frozen. I guess the only exception would be when you add the herb right at the end - I have some recipes that call for adding cilantro *right* before serving, for example - in that case I'd thaw them, not because the water will make a difference, but just because I don't want chunks of frozen stuff in my finished dish.

So if you just freeze them without putting them in water, does that mean you can use them in uncooked dishes, like putting thawed cilantro in guacamole and thawed basil in Heather's Italian Lemon Tuna Sandwiches? Also, do you freeze the herbs as whole leaves or already chopped?
We've got a bumper crop of cilantro and parsley (although Joe is going to try his hand at pesto for himself) and I'd love to save some.

Wash them, throw them in the chopper, and then put them in ice cube trays. Once they're frozen, transfer them to a ziploc bag. Then when you want them, POOF! You just throw in an ice cube or two and you've got flavour!!!! EASY AS PIE!!!!!!!!!!!

Sand, this is my first time freezing herbs, so I haven't tried thawing them yet! I don't see why you can't use them in fresh dishes, although I've heard they can get a little discolored by freezing. Supposedly if you blanch them first they retain their color better, but I didn't bother.
